On thing I hear moms talk about a lot if having quick and easy go to meals. Even if you like to cook having some easier meals in your back pocket are important. On this edition of At Home with the Kings I am highlighting my favorite 3 quick and easy breakfasts.
My kids wake up hungry and ready to eat. If they wake up at 6:30 they are ready to eat before 7:00. This means I need to have a plan if I am going to feed them before my first cup of coffee kicks in. These are 3 of the breakfast recipes I always have ready to go.
Protein Banana Pancakes
These are an oldie but a goodie. These are always quick and easy and you can make them and freeze and they reheat well.
- 1 banana
- 2 eggs
- Sprinkle of cinnamon
Mash banana, whisk eggs, combine and add cinnamon. Cook in skillet. Serve with sliced fruit or yogurt.
Oatmeal Shake
This is one of the boys new favorites.
- 1 banana
- 1/4 cup greek yogurt
- 1/2 cup milk (almond milk or coconut)
- 1/4 cup quick cooking oats
- 1 tbsp nut butter of your choice
- honey
- cinnamon
- Optional: 1 cup fresh berries or 1 peach.
I combine everything into my magic bullet and blend for about a minute. It takes a little time to get the oats blended up all the way. You can serve over ice or just like it is. This is especially great if your kids aren’t big eaters in the morning.
Overnight Oats
Oatmeal isn’t a labor intensive meal but sometimes it is nice to just have things in the fridge ready to go. I put all of the ingredients into a mason jar and add to the fridge and then warm up in the morning.
- 1/2 cup rolled oats
- 1/2 almond milk
- 1 tsp nut butter
- Optional: greek yogurt, fruit, honey, cinnamon, vanilla
