Today is National Ice Cream Day and I wanted to make these fun ice cream sandwiches with you. The truth is we make them without ice cream which sounds ridiculous but believe me they are just as good!
My mom used to make these as a quick summer snack but she used grahm crackers and cool whip. I decided to make them a little more fancy and we use choclate chip cookies and homemade whipped cream.
I would love to tell you that I have this magnificent homemade chocolate chip cookie recipe but I don’t. When I make them I either use the recipe on the back of the chocolate chip bag or I buy cookie dough from the store.
The Whipped Cream is homemade and the recipe is simple and will take you about 10 to 15 minutes. In a large bowl I used a 32oz container of heavy cream, 4 tbsp of sugar, 1 tbsp of vanilla and a sprinkle of nutmeg. I use a hand mixer and it takes about 10 minutes. I start on a low speed and as it thickens I increase the speed. You want the whipped cream to be thick so make sure you can place a spoon or the mixer attachments on the top and they don’t sink. That’s how I know it is right.
You can make this recipe with actual ice cream if you would like, but you should try them like this first and see what you think.
The good thing with whipped cream is that someone is always ready to help me clean up.
Once you have your whipped cream and your cookies have cooled the assembly is super simple. Cookie, whipped cream, cookie. Wrap in plastic wrap or line them up in a pan with wax paper and freeze for an hour and a half so they set up all the way.
After they set up they are ready to eat… or for a photo shoot.
